As many fans of Gorko chef Rambo Bolillo’s world-famous cooking show know so well, Rambo is not a big fan of conventional dicing and chopping techniques, often favoring to use nothing but his sharp ninja hands to slice and dice, to the astonishment and wonder of his viewers. ONION
‘Don’t cry for me, Louisiana,’ the award-winning chef told The Gorko in a recent interview, explaining that many people experience trepidation when facing the ubiquitous onion, knowing that in the process of chopping onion they very well may be driven to tears, or beyond. ‘I take care of my onions in the blink of an eye,’ Chef Bolillo confessed, ‘no standing around sniffling, I simply toss them in the air, whack, thwack, shumack, with my deadly palms, and voila, the onions are ready.’
MEAT
‘I used to chop everything with just my mincing, dicing hands,’ Rambo told The Gorko, ‘but in recent years have gotten away from chicken and lamb.’ He said, ‘Too tender — no real challenge. Now on Tuesdays when we get in our beeves I spend at least forty minutes in the cooler with them, and it is like karate 101.’
PEAS
‘Peas is a special problem in the kitchen, especially the way people around here just nibble at their food like princesses,’ Chef Bolillo said. ‘We are especially careful with the preparation of the peas, and this almost always requires that we chop them by hand.’
